As a kitchen cutting implement, cleaver is my go-to cutting tool for most tasks, even those not typically associated with this style of knife’s use.Make no mistake that the Klaus Meyer cleaver is a substantial knife designed for medium-to-heavy duty use. This is not a light, dime-store kitchen implement. The Klaus Meyer is a utilitarian knife that’s heavy in the hand by design. It’s sturdy and strong. It’s not as wieldy as the go-to, lighter duty cleaver I use to whip through those lighter tasks where a lighter cleaver’s deftness makes for quick work. I have to admit that the heft of this knife took me a little getting used to when I first started using it.Cleavers are not typically associated with slicing delicate foods like tomatoes, but I find that a very sharp, lighter cleaver works as well for this task. The Klaus Meyer cleaver does not work well for slicing delicate foods, not because of any design flaw, but because this cleaver’s feature is a thick and substantial blade.This cleaver is better suited for the utilitarian tasks best associated with cleavers such as splitting and chopping hard vegetables, and it works way better for my frequent preparation of butternut squash for a favorite soup recipe.Another reason I like using a cleaver in food preparation tasks is for scooping up the chopped ingredients. This blade is not as handy at that chore based on the square, solid thick front end. This isn’t any defect or shortcoming on the Klaus Meyer cleaver’s part because the blade is proportional, but I do miss this feature when using this more substantial cutting tool.I was slightly less than impressed with the blade’s out-of-the-box sharpness, but the knife is easy to put a good edge on and keep it there with normal sharpening. What I mean by that is for the Klaus Meyer’s intended use, I don’t find myself having to sharpen it any more than other blades I use for similar tasks.The Klaus Meyer cleaver is a great addition to my collection of kitchen blades.
